The First Cool Evening Calls for Something from the Oven

On the return of roasting, braising and bread

·Alex & Selkie
A warm home kitchen with a freshly baked dish coming from the oven.

There is always one evening when you notice it.

The sun goes down a little earlier. A window that has been open all summer gets closed. And suddenly salad is not what you want for dinner.

You want the oven on.

Cool-weather cooking has a different rhythm. It gives ingredients time. Onions become sweeter. Tougher cuts become tender. A loaf develops a crust. The kitchen begins to smell like dinner long before dinner is ready.

We love that transition.

It is when roasting comes back into regular rotation: chicken with crisp skin, pork with apples or mustard, root vegetables browned at the edges. It is when a pot of stock no longer seems excessive and when soup can be a meal rather than an obligation.

It is also the beginning of our more ambitious cold-weather projects at home.

As temperatures drop, you are likely to find something brining in our refrigerator. Meats may be waiting for cold smoking. Cheese might be next. Speck and hams become projects again. Bread seems to happen more often.

None of this is necessary, of course.

That is part of why we enjoy it.

Cooking can be practical and still be play. It can solve the question of dinner while also giving you something to experiment with.

For Savoyage clients, the change in season is a chance to revisit favorites that have been waiting all summer. Braises. Rouladen. Curries. Roasts. Baked pasta. Dumplings. Soups that are actually worth looking forward to.

The first cool evening does not require a grand occasion.

Sometimes it just requires butter, flour, an oven — and the realization that baking something at nine o'clock suddenly sounds like an excellent idea.
